The Macallan Triple Cask Matured 12 Years Old forms part of their Triple Cask Matured range; a series of single malt whiskies crafted in a triple cask combination of European and American sherry seasoned oak casks and American ex-bourbon oak casks.
We tasted the 12 year old triple cask from Macallan over a couple of weeks to see how it changed. It is a traditional single malt at 40% and definitely needs to breathe before drinking. Either add a touch of water, to offset the tannins and concentrate the fruit flavours, or let it aerate a while, which softens it dramatically.
The colour is a light golden syrup and the nose is distinctly young at first for a 12 year old single malt. First a waft of green tobacco, but as it breathes it releases hints of vanilla and sherry that make way for sweet rum raisin and madeira cake.
The triple cask combination of European sherry seasoned casks, American sherry seasoned casks and American ex-bourbon casks gives this Scotch from Speyside a unique fusion of flavours.
On the first sip there is an initial cedar and oak with a lot of spice, pepper and nutmeg, then the sweetness kicks in with lemon, pear drops and geraniums.
A spicy finish of lingering pepper, Lapsang Souchong and oak balanced by sweet marzipan and bourbon.
This is a whisky for those that appreciate a traditional Scotch whisky, that comes with a few subtle surprises along the tasting journey.
