Festive Mincemeat Muffins

Makes 24
275g self raising flour
½ tsp bicarbonate of soda
1 tsp mixed spice
½ tsp cinnamon
75g caster sugar
1 egg
250ml milk
75g butter, melted
1 x 411g jar mincemeat
75g raisins
1 Preheat the oven to gas mark 6/200C/180fan. Grease a muffin tin.
2 Sift together the flour, bicarbonate of soda, cinnamon and mixed spice in a large bowl. Stir in the caster sugar.
3 In a separate bowl mix together the egg, milk, melted butter and mincemeat.

It's not brand new but the 1199 Panigale is a super bike to drool over. Also the photo campaign by Moto Corsa is hilarious. They did the usual super bike shots with a scarily clad lady and then swapped in a few more beefy chaps to even the playing field and give women something to enjoy.
It's a great parody and show Ducati really do have a sense of humour as well as making dream super bikes.

The Hotel du Vin in Winchester came recommended to us by friends who are chefs and it made an ideal stop on our Aston Martin British Luxury Tour, as we had wanted to visit the Cathedral and the surrounding countryside for a while.

So we decided to take the Aston Martin DB9 over to the Hand and Flowers in Marlow. The chef is Tom Kerridge and in 2011 he had the distinction of being the first pub to receive two Michelin Stars, putting him up there with chefs like Michel Roux at Le Gavroche and Raymond Blanc at Le Manoir aux Quat’Saisons. As we were on a British Luxury Tour, this pub seemed like the perfect stop for lunch on our way to Cliveden Hotel and Spa, where we were staying the night.

It all started over an inebriated argument between banker husband and wife essentially covering the topic of how manly escapades were no longer partaken of. Just work and family. A few phone calls later to a once legendary but now ageing crew, myself included, and permission granted from partners (bribed with future promises of luxury spas) and the die was cast.
So International eXcellence Magazine set off for the 24 hrs of Le Mans with some very old friends in three Ferraris for a manly few days of luxury camping and racing!
