Chocolate Brownies
Treat friends and family to these divine chocolate brownies.
Makes 16 squares for tea or 64 mini squares for canapés.
200g butter
200g dark chocolate
3 large eggs
275g caster sugar
100g plain flour
30g cocoa powder
70g milk chocolate
70g white chocolate
1 Preheat the oven to gas mark 4/180C/160 fan
2 Line a 23cm square tin with a large piece of baking paper. (This will enable you to lift the brownies out of the tin easily.)
3 Chop the white and milk chocolate into chunks and leave to one side.
4 Cut the butter into pieces and place in a bowl, break the dark chocolate into pieces and place on top of the butter. Microwave on high for 2 minutes, leave to stand for a minute and then stir until the butter and chocolate are smooth and glossy.
5 Using an electric mixer whisk the eggs and sugar together for 5 minutes until they are very thick and much paler in colour. Pour over the chocolate mixture and stir in gently.
6 Sieve the flour and cocoa powder over the egg and chocolate mixture and using a large spoon or spatula fold together being careful not to knock too much air out.
7 Finally stir in the chopped white and milk chocolate and pour the mixture into the tin.
8 Cook in the preheated oven for 35-40 minutes. The top of the brownies should start to crack and develop a papery appearance.
9 When cool lift out of the tin and cut into squares, leave to cool, alternatively they can be eaten warm!
