From July 1st to August 31st, prepare to be whisked away on a culinary journey fit for royalty (or at least a particularly discerning monarch).
I dined at Wilton’s last night with friends and it was a blast. The crowd were a mixture of fantastic faces from the last two decades in politics and film.
Picture this: Devilled Eggs and Caviar, where cayenne-spiced boiled eggs become the red carpet for the finest caviar, proving that even humble eggs can have a glamorous makeover. And who could forget the Prawn Cocktail, a dish so timeless it's practically a culinary Delorean, zipping us back to the era of classic tangy cocktail sauce and plump King prawns?
But wait, there's more! Plaice Kyiv takes Cornish wild plaice to new heights, embracing its inner garlic butter enthusiast and doing the Kyiv dance of deep-frying perfection. And for the beef aficionados, Beef Fillet and Bourguignon garnish delivers a knockout punch of pan-fried prime beef fillet, accompanied by a supporting cast of onions, mushrooms, and bacon lardons, all bathed in a beef jus so good it should have its own fan club.
And let's not forget dessert, because no royal feast is complete without a sweet finale. Enter the Strawberry and Sherry Trifle, a classic confectionary symphony of sponge, strawberries, custard, and jelly, proving once and for all that trifle is not to be trifled with. And for the cheese lovers, Stilton served with Yorkshire Parkin and fresh Honeycomb is the perfect denouement, a savoury-sweet encore that leaves taste buds begging for an encore.
Wiltons, London’s most venerable dining establishment, has been delighting patrons with its exquisite seafood since 1742. What began as a modest shellfish stall founded by George William Wilton near the bustling Haymarket has blossomed into a legendary restaurant steeped in history.
Over the years, under the careful guidance of Wilton's descendants, the establishment evolved from its humble origins into a distinguished dining destination, obtaining an alcohol license in 1840. Its reputation flourished, culminating in the prestigious Royal Warrant as Purveyor of Oysters to Queen Victoria in 1868.
Despite passing through various hands, Wiltons remained steadfast in maintaining its impeccable standards and aura of exclusivity. A remarkable chapter unfolded during the turmoil of WWII when, following a near-catastrophic bombing in the vicinity, owner Bessie Leal transferred ownership to loyal patron Olaf Hambro.
Today, nestled on Jermyn Street amidst upscale fashion and dining establishments, Wiltons retains its timeless charm and classic private gentlemen’s club ambience. It remains a favoured haunt for discerning diners and a quintessential embodiment of British culinary heritage, offering the same unparalleled selection of oysters, seafood, and game that has captivated palates for over two centuries.

Chef Daniel Kent, a culinary artist hailing from Yorkshire, has been making waves in the London food scene for decades. With a deep passion for British produce and a flair for French techniques, Chef Kent has been leading Wiltons since 2011, transforming it into a cornerstone of British hospitality. He began his career in a local restaurant in Beverley, East Yorkshire, where his quick learning and talent caught the eye of the head chef. This initial spark propelled him to pursue higher education in hospitality, subsequently leading to roles at renowned establishments such as The Wolseley and Skylon. Today, Chef Kent guides a young brigade of chefs, mentoring them with the same encouragement and dedication that ignited his own illustrious career.
