CUT At 45 Park Lane - Excellence in Steaks

“We really should do this more often”. These are the words spoken by one of my oldest friends who had cancelled a business meeting to join me for dinner. It is not that we don’t meet up to eat regularly, we do often. It was the fact that this was in one of London’s finest steak restaurants - CUT at 45 Park Lane. Sometimes, an exceptional piece of meat, cooked medium rare, with great company is just what you need.

The Whisky Exchange

Irish whiskey, alongside rum, are two categories I want to delve deeper into during 2024. They both excite me in different ways. Irish whiskey is gaining momentum and there is a real keenness to explore flavours and different finishes. This may not be for the purist, but I actively seek out the different. Single Irish Post Still Whiskey is made from both malted and unmalted barley, making it quite different from Scotch in its flavour profile.

Joseph Phelps winery at sunset

Exploring Insignia - Joseph Phelps' Flagship Wine

In the heart of Napa Valley lies Joseph Phelps Vineyards, a winery that I fell in love with during a visit in 2004, while conducting research for a book on North American wines. Unlike many other estates, Joseph Phelps had a human touch, an absence of corporate sterility that left a lasting impression. Here, the emphasis was on genuine care and the people who worked there.

At the heart of Mossburn's whisky production is the art of blending. They are passionate about the craft of combining different whisky stocks to create harmonious and complex final expressions. They meticulously select casks from various distilleries, each contributing its own distinct flavour profile, and blend them to achieve a balanced and memorable whisky.

The Torabhaig Allt Gleann Batch Strength

David's Dram Diaries - Issue 1

As a whisky writer, I have the privilege of receiving invitations to a multitude of events, allowing me the opportunity to sample a wide variety of fine and rare whisky. While my passion for whisky would ideally lead to comprehensive articles for each event and whisky, the constraints of time render this impractical. Consequently, I will be introducing a column to provide succinct summaries of my impressions.

The Accelerator and The Brake being poured

The Accelerator And The Brake: An Exceptional 33-Year-Old Scotch From The House Of Hazelwood

Nestled behind the worn black doors of Duty Free Warehouse “No 3” lies a treasure trove of whisky barrels, meticulously stored over decades by the Gordon family. As proprietors of William Grant, the parent company behind brands such as The Balvenie and Glenfiddich, their 80-year legacy of astute laying down of casks has yielded an extraordinary collection of malt, grain and blended whiskies, notable for their high age statements.

The 1983 Port Ellen photographed in the companies Huntly whisky store.

An Outstanding 40-Year-Old Port Ellen Whisky from Duncan Taylor

Islay, the picturesque island nestled in the southernmost part of the Inner Hebrides, is renowned for its rugged beauty, rich history, and, most importantly, its whisky. Among the many distilleries that dot the island, the one name that has achieved mythical status is Port Ellen. I have yet to meet any lover of peated whisky who does not jump at every opportunity to taste the spirit from this closed distillery.

A portrait of Ardray whisky in David Pearce's signature style

Ardray Whisky - A Truly Delicious Blended Whisky

I typically abstain from writing about blended whisky, but it is necessary to change that stance given the resurgence the category is experiencing. Blended whisky, when crafted with care, can offer a delightful drinking experience, deserving far more recognition than it currently receives. Gone are the days of dismissive notions about inexpensive, characterless bottles; instead, we must shift our focus to the profusion of new premium releases that have emerged.
