When Bruno Paillard founded his eponymous Champagne house in 1981, his vision was clear: to make a Champagne of purity, reflecting the finest expression of its terroir. I first visited the estate 10 years ago and fell in love with this purity then. 

Nestled in the heart of Champagne, Billecart-Salmon house has been family-owned and operated since it was founded in 1818. Today, under the stewardship of the seventh generation, Billecart-Salmon combines tradition with innovative changes and thought processes that have been incorporated into their Champagnes gradually over the past few years.

If only Eurostar still stopped at Ashford International; it would have saved me countless hours over the past few months. However, stepping into the Business Premier lounge quickly put me at ease. Thanks to the iProov.me app, which streamlined the check-in process (so much so that the Business queue felt slow in comparison), I was able to relax before my journey. With Champagne Drappier awaiting me at my destination, enjoying a glass of bubbly at 6:30 a.m. felt perfectly justified.
